Need For Speed 5: Porsche Unleashed
It was a big change from its older brothers. EA did an arrangement with Porsche to fully licence (almost) all their cars and devoted the whole game only to Porsche vehicles.

Evolution Mode
In this main mode in the game you were set to 1950 to race in a then-new Porsche 356 Coupé Ferdinand and challenged yourself through the time with cars like the classic '73 911 RS 2.7 Coupé or 935 "Moby Dick" a 800HP monster with 4 speed gear box to year 2000 where you will have the final championship with the new '00 Porsche 911 (996) Turbo.
In this mode there were 3 main "classes". Namely Classic Era, Golden Era and Modern Era. Each era has one make final race involving their at time race cars. These 3 races were not mandatory as you could just hit decline button.
For Classic era it was '56 550A Spyder, the Targa Florio winner, for Classic era it was the already mentioned 935/78 "Moby Dick", a Le Mans contender and finally for Modern era it was their '98 911 GT1 Le Mans winner. If you won the race, You also won the specific and expensive race car.
Factory Driver
This mode was just about a series of licence tests involving time trials, handbrake turns or cone slaloms.
Quick Race
As the name suggests this mode was about picking car, track (laps), traffic density and your oponents. The car could be default in quick race garage or from your Evolution Mode garage or won from Factory Driver Mode.
Multiplayer
This mode allowed you to race with or against your friends. I never really used it, so i cant tell much about this mode.
Music soundtrack
This game was second to last NFS, where people like Rom Di Prisco (aka Morphadron) or Saki Kaska (AKA Captain Ginger) compiled the music soundtrack.
