I currently have 2 Gimbald Thrusters at level 4. Each one states that my roll recovery speed is reduced to 0.970 of original. Does having 2 of these installed at the same time give my ship a better effect? Or is only 1 component usable at once?

I was having the same problem until just the other day. Stock up on Mk 13 missiles (with the laser heads). Use them heavily until the enemy systems are damaged. Once you've gotten their weapons and most of their defenses offline switch at least one missile tube over to nukes to maximize hull damage and keep hammering them.
Once you get their weapons offline the battle is actually easy.
