Jean Bison has appeared only in Sly 2: Band of Thieves.
Jean Bison had four of the Clockwerk parts, the Lungs, Stomach and Talons. He used the two Lungs and the Stomach on his trains, which could run non-stop with the parts installed. Sly and the gang managed to steal all three parts, which made Jean Bison escape to his lumber camp.
It was here that Jean Bison continued his true plan, which was to collect the energy of the Aurora Borealis, which was part of Arpeggio's plan. He also was planning for the Lumberjack Games, offering the Clockwerk Talons as a prize, which drew Sly and the others in. They managed to defeat Jean Bison in the games, but were captured in the process. Jean Bison and his men raided Sly's hideout, stealing the Clockwerk parts they had already gathered.
These parts were then sold to Arpeggio, and Bentley was forced to fight with Jean Bison. Using the lumber camp equipment, Bentley was able to defeat him. He wasn't arrested, but managed to reform himself. He ended up working for the EPA and got frozen again while trying to rescue baby penguins.
