You'll get a taste of the Stencil Art collectible at the very beginning of the game, where you have to deface a billboard of your brother's face. There will be plenty of these around the districts of Seattle, which are marked on your map as spray can icons. Whenever you approach one, you get the option of either spraypainting something for Evil Karma or Good Karma.
The game requires you to hold the controller sideways and then shake it as if it were an actual spray can. After that, you will have to fill in a stencil as you hold down R2, and there will be multiple layers. Note that the game will automatically stop and move to the next section if you filled in all of the required area, so if it doesn't, then keep spraying around until it does.
