An easy spot to find rabbits is right outside of Cassardis, but they will run away from you as you approach them. Of course, you should be able to easily catch them as they get caught up on the rock walls and other obstacles. One hit will kill them, so this quest shouldn't take long at all. Note that if you have Off With Its Head in your log, animals won't spawn until you finish that quest.
