Appearance
The Hunter Demon seems to be some form over over grown Chimpanzee or Gorilla demon. It is remarkably fast and agile, capable of crossing large distances quickly and scaling tall structures with ease. It can stand on just two legs while it uses the front "arms" to attack but can also use all four limbs for locomotion.
While it can be compared to a Gorilla in appearance, it seems to fight using its agility rather than through overwhelming force as a Gorilla might do. It pairs its remarkable speed with the use of a knife to inflict damage. This suggests that while the demon is quite large, it may be weak compared to other demons of similar stature.
The Hunter Demon also carries what looks like a Grappling Hook with him at all times. This may seem like an unusual tool considering the agility of the creature and how unlikely any manmade structure would be to sustain the demons weight on such a small amount of space. While this hook is used frequently in battle to disrupt the floor of the battle ground, it's very likely that the Demon tends to use this to capture its prey since it is a Hunter.
At first, the demon appears to be bullet proof but after being struck with a molotov cocktail, it seemed to be weakened. The slits on its face opened up somewhat to reveal a softer flesh that could be harmed. Whether the demon is inherently weak to fire or if it did this to compensate (as a person may close their eyes) is unknown.
Strategy
The Hunter Demon is large and has several styles of attack. From a distance, particularly when he's climbed up on top of something, he can shoot his hook gadget at the ground and cause a large ripple (as he did earlier) that can hit you. He can fog up the area and throw his knife as a boomerang. Shooting it will slow it down to make it easier to dodge but you can't really do anything else until he grabs the knife again.
He will also get close and swing at you with his knife. These attacks are broadcast by rather large wind ups in the opposite direction from which he will swing and the dagger will flash just before the attack motion is made. He can swing at various heights both horizontally and vertically. Since he can hit you anywhere, the key is to use the Evade button to dodge out of the way. This will usually get you out of the way of his attack. Lastly, if he jumps into the air, watch for his shadow because he can come crashing back down to do damage. Be sure to also jump off the ground to avoid behind hit by the shockwave.
If you attack quickly, you can generally stun him so try and get close. Jump up and hit him in the head to deal some massive damage but be ready to Evade (yes, in the air) when he swings. If you can get him to bend forward, you can take some easy shots. When he falls on the ground, just start swinging away with whatever combos you can get (Death Coil can really score some points here).
When he gets up, he'll likely retreat and climb up the roller coaster. At this range, start shooting at him. Pull the trigger as quickly as possible and you should be able to knock him off fairly quickly (before he attacks if you're quick enough).
Later, when you have the Ophion Angel Lift, you'll be able to use that in this fight to pull yourself closer to his face. In the mean time, get close the old fashioned way. Keep hitting him in the face every chance you get and you'll have him down in no time.
