The Knife Throwing activity is completely optional and allows you to earn some money by gambling. This activity can be one of the worst (or the best way to make money depending on your skill), due to how good the computer AI performs on harder difficulties. The basic idea is you get 5 tries to throw a knife at a target, which if it hits, you will score points based on where it hits.
The most points one can get is 500, which requires almost perfect throws each time that hit the bullseye. When it's your turn, aim with the camera and hold the button down and try to get the power to land at the white strip, which is the sweet spot.
There are three bets you can place when doing this activity, which are $50 (Novice), $100 (Skilled), and $200 (Expert). There's also a Practice choice, but you don't win anything from that. If you win, you get double your bet back, so if you bet $50, you will get $100 back (essentially winning an extra $50). Here are the locations of all the Knife Throwing activities:
