You can hold up stores and commit various robberies in Grand Theft Auto V.
To hold up a store simply walk into it and point a gun at the shop clerk, he'll then put the cash in his till into a carrier bag which you can them make off with. Shooting the clerk afterwards is, of course, entirely optional.
If you manage to steal a bank van, you can blow the doors off the rear and steal the money inside.
And, as ever, you can loot any corpses you create in the game if the person was carrying money at the time.
